Authentic Italian style spaghetti bolognese
A tasty version of bolognese- rich but fresh and simple
packet of lean bacon lardons
I get mine from Asda, but you can just chop up bacon rashers with fat removed
mince- I used 500g of lean beef and 500g lean pork
but you can just use beef
tins chopped tomatoes
in this batch I used 1 tin Cirio chopped tomatoes, and 1 tin of Cirio baby plum tomatoes
red wine stock pot
This is from Tesco's- you can substitute with 1 beef stock cube if you can't get this
salt and pepper
Low calorie cooking spray
Fry the onion, garlic and celery in low calorie cooking spray for about 5 minutes, and then add the bacon. Fry for a further 2 minutes.
Add the mince, and stir fry (breaking up) until browned
Add in the carrots, tinned tomatoes, stock pot, bay leave and salt and pepper and simmer for 45 minutes, until the sauce is thick and rich.
Perfect served with spaghetti and an italian style salad, or a mixture of courgetti and spaghetti!
