1carrot peeled and then sliced into ribbons using the peeler
a handful broccolipulled apart into small florets
1chicken thigh filletcut into small pieces
Heat the oil in a frying pan, and throw in the chicken to start cooking.
Fill a pan with boiling water and pop in the noodles (usually around 3 minutes to cook)
Give the chicken a good stir, and add in the ginger and garlic. Stir fry for 1 minute, then add in the soy sauce, half the carrot and the broccoli
Drain the noodles when cooked, and set in the colander over the hot drained water while you finish stir-frying the chicken. (I sometimes add a little splash of boiling water at this point to stop ginger and garlic burning)
Once the chicken is cooked through, toss in the noodles and stir to combine.
