Thai style chicken satay fried rice
Super tasty and healthy all-in-one rice dish
trimmed and finely sliced
or 2 small carrots peeled and diced small, or julienned
handfuls frozen peas
pre-cooked wholegrain/brown rice
chopped into small chunks
For the marinade:
smooth peanut butter
light soy sauce
zest & juice 2 limes
Mix together the peanut butter, soy sauce, fish sauce and lime juice and zest until combined
Add this to the chopped chicken and stir in thoroughly
Brush 2 tsp sesame oil over the pan of the Actifry, and add the chicken. Set to cook for 7 minutes (Open up half way thought just to ensure chicken isn't clumping around paddle)
Add in the spring onions, pepper, carrots, red chilli and garlic and cook for a further 7 minutes
Add in the precooked rice, frozen peas, and 120ml water and cook for a further 6 minutes
Garnish with coriander, red chilli and slices of lime!
If you don't have an Actifry, you can do this in a wok by following the same process and timings!
