Weetabix cake

At only 4.5 syns per slice, this is beautiful served warm with a cup of tea, and incredibly easy to make!

This recipe was an old recipe from the Slimming World website and it’s a lovely recipe- no hassle at all to do, but with great results. It’s particularly lovely while still warm, and if you have a few syns spare, maybe spread with a teaspoon of butter!

As flour is a bit scarce at the moment, this only uses a little bit, and the bulk of the cake comes from the Weetabix!

My Recipe

Serves: 12
Syns: 4.5 per slice
Healthy Extra:

  • 2 Weetabix
  • 110g sultanas
  • 150ml skimmed milk
  • 150ml water
  • 110g self raising flour
  • 1 tsp mixed spice
  • 2 tbsp granulated sweetener (or if you prefer, 2 tbsp honey or golden syrup)
  • 1 egg, beaten

  1. Preheat the oven to 180°C/160°C Fan/Gas Mark 4.
  2. Put the Weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.
  3. Stir in the flour, mixed spice, sweetener and beaten egg.
  4. Spoon the mixture into a 450g lined loaf tin and bake in the preheated oven for 1¼ hours, until cooked.
  5. Cool on a wire rack before serving, then cut into 12 slices.
