Vegetarian meal ideas
As our thoughts often turn to healthy eating in January, and many of us are trying to include more vegetables in our diets, I thought it would be useful to share some of my favourite vegetarian meals.
What are the benefits of eating more vegetables?
Fruit and vegetables are a great source of vitamins and minerals essential for a healthy body and mind. They are also a brilliant source of dietary fibre, which helps us to maintain a healthy gut and prevent constipation and problems with digestion. Vegetables can help reduce your risk of heart disease, stroke and some types of cancer.
Another big bonus of vegetables is that they are low in fat and calories (depending on how you cook them of course!), so they are a great way of filling up if you are trying to lose weight, or maintain a healthy weight.
What else do we love about vegetables?
Variety: There are so many possibilities of amazing meals with the huge variety of vegetables available, and always something new to try!
Colour and texture: Vegetables are a great way to jazzing up a meal with great colour and texture- The Thai carrot and red cabbage salad featured below is an excellent example of this!
Convenience: You can get vegetables fresh, frozen, canned dried, or pickled and they are all still good for you! In fact frozen vegetables are picked at their peak in terms of freshness and nutrients, but have a much longer life than when we buy them ‘fresh’.
Soups are just a brilliant way to pack in those portions of vegetables. Not only can soups be both delicious and filling, they are a great way to get extra portions of veg into fussy eaters, and make a really convenient lunch choice. I love to make big batches of soups and freeze extra portions for a ‘ready meal’ whenever I need it!
