One-pan lemony chicken rice
I love anything that can be cooked using just one dish- it makes life so much easier, so I'm often experimenting with one pan wonders. This one was inspired by the fact that my girls seem to love anything which is lemony (such as this lemon and thyme chicken penne and this Lemony chicken and cannellini bean stew). I've often mixed seafood with lemon and pasta, but never chicken, so this recipe was a bit of an experiment but I thought it was a winner! My kids love this too, without the chilli.
I have loads of chicken breasts at the moment as ...
Mini ham and mushroom quiches
Using the ham to make a cupe for the little quiches not only keeps them tidily together, but adds a lovely base to the egg, with some lovely crispy bits around the edges.
If you use the Dairylea triangles in this recipe as part of your Healthy Extra A then these tasty kievs are only 2.5 syns. Rice Krispies provide a super-quick and easy crispy coating.
