Fall-apart slow-cooker beef brisket and ale casserole
Sometimes nothing hits the spot like a beef casserole, and as it's such a crowd-pleaser it's great to cook for the whole family, or make enough that you can squirrel some portions away in the freezer for another day.
I love a basic beef casserole just made with beef stock, but honestly I think that when it's made with ale, guinness or red wine it just makes it so much more delicious that it's well worth it.

Beef and Guinness stew
There's little that can get me more excited than a proper plate of beef and Guinness stew! There's just something about it- it's the perfect comfort food as far as I am concerned. Now for me, following Slimming World, it really is worth using those few syns up to cook this in the Guinness, as it makes such a gorgeous meal, but if you wanted to keep it syn free you could cook it just with beef stock, or with the fabulous red-wine stock pots that you can get from Tesco.

The very first thing that I cooked in it was beef and ale stew, and I would definitely say that over the years it is the thing that I have cooked in it the most frequently. It's just simple, tasty comfort food, and the slow cooker will turn the toughest of beef into melt-in-your mouth tenderness.
