Oxo roast potatoes

An easy way to make delicious roast potatoes without using fat or oil!

This simple method makes very tasty roast potatoes, moist on the inside and crispy on the outside.

A beef stock cube is perfect alongside roast beef, or you can do it with a chicken stock cube!

Healthy Extra:


  • 8-10 white potatoes (maris piper make nice roasties)
  • 1 Oxo cube, chicken or beef
  • Frylight


  1. Preheat oven to 180°c
  2. Chop each potato into 2 or 3 parts, depending on size
  3. Par-boil your potatoes in boiling water. When ready, drain and shake to rough up the edges.
  4. Pop your potatoes into a deep baking dish
  5. Prepare your stock. Once ready, pour the stock over the potatoes, so it covers around 2/3’s.
  6. Spray the tops of the potatoes with Frylight and season them lightly
  7. Cook in the oven until the stock has evaporated (around 1 hour)

Additional Info

If you've been cooking your potatoes for an hour or so and still seem to have loads of stock left, you can cheat a little and pour a bit out to speed them up!
