I kept seeing this recipe pop up in the various Slimming World Facebook pages that I follow, where everyone was raving about it! It’s a bit of a change to just spraying the potatoes with Frylight, and makes for a lovely moist inside and crispy outside.

Oxo roast potatoes

Ingredients

  • 8-10 white potatoes maris piper make nice roasties
  • 1 Oxo cube chicken or beef
  • low calorie cooking spray

Instructions

  • Preheat oven to 180°c
  • Peel and chop each potato into 2 or 3 parts, depending on size
  • Par-boil your potatoes in boiling water for 5 minutes. When ready, drain and shake to rough up the edges (this gives those lovely crispy bits)
  • Pop your potatoes into a deep baking dish
  • Make up your stock according to the packet instructions. Once ready, pour the stock over the potatoes, so it covers around 2/3 of the way up the potatoes.
  • Spray the tops of the potatoes with Frylight and season them lightly
  • Cook in the oven until the stock has evaporated (around 1 hour)

Notes

If you've been cooking your potatoes for an hour or so and still seem to have loads of stock left, you can cheat a little and pour a bit out to speed them up!
