Warm chocolate mug cake

It's been one of those days when my Facebook news feed seems to be filled with videos of people making Nutella cakes and Kinder cakes and it's making me crave chocolate! I thought I'd have a go at an easy mug cake using Sweet Freedom Choc Shot (you can buy it here on Amazon, but its cheaper in the supermarket). It did it for me, it tastes good, it's not eggy and it's warm and chocolatey! It's not the Nutella cake I've been drooling over, but it certainly satisfied me enough to avoid any ...

Pink pancakes

I'm always experimenting with different pancake recipes as I love them as a breakfast option! These ones use pureed raspberries to flavour them, and are lovely served with honey, golden syrup or choc shot and some fresh berries!

Raspberry maple muffins

These were a little experiment as I really fancied something freshly baked but not unhealthy. These muffins have a bran flake base, so they are full of fibre, the raspberries give them a gorgeous flavour and the maple syrup and orange juice sweetens them up perfectly without making them oversweet.

Blackcurrant jam baked oats

I prefer baked oats to overnight oats and porridge- it's such a nice 'cake-ey' thing to have for breakfast! These ones use blackcurrant jam to give them just enough sweetness without being overloaded. I love them served with fresh berries and some fat-free strawberry yoghurt.

Giant Jaffa Cake

I've seen this on a couple of forums so thought I'd give it a go- it's very simple to make, just make sure you don't eat the whole thing! This one is 5 syns per slice if you cut it into 6 pieces.

KFC style chicken

Fairly recently my husband and I got stuck in terrible traffic on a long road trip, and had the choice of McDonalds, Harvester or KFC. As we wanted to be quick I said I fancied trying KFC- I hadn't had it since I was a kid when it was a big treat that we only ever had with my Uncle and cousins. I could have gone for a healthier rice box but I was really curious to see if the chicken was as good as I remembered... it tasted really good and I could see how you could get addicted to it, but ...

Mini chocolate orange Christmas puddings

I've made a very naughty version of these before with my kids involving lots of cornflakes, cocoa and golden syrup-  I wanted to do something similar, but something that wouldn't use up all my syns in one fell swoop if I indulged! These use a scan bran base* (which you could even use as your HEB!), and a very low syn chocolate orange spread from Musclefood (click here). I think these taste really good, and if you keep them stocked up over Christmas will hopefully keep you out of the ...

Coffee cup warm jam sponge

I was sent some Jim Jams reduced sugar strawberry jam to try and so had a little experiment with a cake made in a coffee cup! It came out really well, so here it is!

Carrot and orange oat cookies

These were an experiment as I was feeling so bored of all my usual breakfasts and wanted something that tasted like a treat but wasn't full of fat! These tasted lovely fresh out of the oven and I think it's a real bonus that they also contain some lovely speedy carrot! I used date nectar to sweeten them, but you could use a syn free sweetener if you want to make them almost syn free (the baking powder is also synned), or use golden syrup if you don't have date nectar.   ...
