Winter raspberry and chocolate log
I was lucky enough to be invited recently to a Christmas lunch at the Slimming World head office(you can read all about it here )- this was one of the pudding choices and it was absolutely lovely! It is only 3 syns per slice so perfect for a guilt-free Christmas treat and it makes a gorgeous centrepiece for a Christmassy table!
This is from the Slimming World Festive Feasts Cookbook which is available in Slimming World groups, priced £4.95.
Please note the one in the picture was ...
Mini tuna quiches
I can't believe that I have never experimented with filo pastry before! It's so much fun to use, and so easy to use, with the plus-side being that because the sheets are ultra thin it's super low in fat (and syns!). On Slimming World, the average sheet is 3.5 syns, so for something like these mini quiches you can manage a brilliant snack with very few syns. Out of one packet of filo sheets I made a chicken pie (for the kids- but will definitely do a healthy version soon- I use butter to fry ...
Oaty blueberry pancakes with toasted almonds and Manuka honey
I love a treat breakfast, it takes me back to a visit to America with my friend's family when I was 16- every morning her Aunt cooked these amazing treats, waffles, blueberry muffins, pancakes... I still love at the weekend to make a more special breakfast, but I'm also conscious about keeping it healthy. When Rowse honey asked me to create a superfood breakfast containing their Manuka honey, I was well up for the challenge! My biggest discovery in the past year is oats- I can't believe I ...
Chip shop style curry sauce
Up until about 3 months ago I had actually never had chips and curry sauce- it passed me by even with all those late night takeaways in my youth!
I had it for the very first time at our 'local' (and it's a pretty special local) Glazebrook House. The Executive Chef is Anton Piotrowski (he won Masterchef professionals in 2012). My husband and I had a rare day off together, both kids were at school/nursery and we had a gorgeous walk up on Dartmoor and stopped off on our way back. It ...
Virgin frozen strawberry daiquiri
This is a beautiful drink! It tastes delicious, is incredibly refreshing and it also just looks amazing! You could spice it up with a shot of rum, but I think it's lovely just as it is. You need to make sure you have nice, ripe and sweet strawberries.
Guilt-free raspberry and strawberry cheesecake
I am really quite excited about this recipe... I think it really tastes like a proper treat, but it's so good it practically has a halo!
The oats form the base (and if you are following Slimming World you can use these as half of your healthy extra B choice). The cheesecake mix is a lovely, satisfying texture- it just feels indulgent!
Blueberry and lemon sauce
I made my 'Healthy delicious pancakes' this morning, and really wanted a tasty topping for them that didn't undo all the good work! This blueberry lemon sauce was really delicous- worked perfectly with the pancakes but still felt like a healthy option.
If you are following Slimming World you do need to syn cooked/pureed fruit, but it really isn't much and definitely worth the syns!
Healthy extras pizza
Although this isn't a recipe as such, it's been one of the more popular posts on my Facebook page (click here) and Instagram (click here).
If you are following Slimming World there are certain wholemeal bread mixes that can be your healthy extra b choice (60g made up), and therefore the perfect vehicle for a delicious homemade pizza!
I used the Asda Chosen by you wholemeal bread mix, and at the time of writing this (1st April 2016) you can also use Aldi 'The Pantry' Crusty Wholem...
Chocolate and raspberry breakfast muffins
I've never been a fan of breakfast, so wanted to have a little try at baking something tempting with weetabix! Use the weetabix as your healthy extra B choice, and these are only 2 syns for 2.
They aren't going to taste like 'proper' chocolate muffins- they do have a weetabix flavour to them, but they have a light and fluffy consistency, and nice flavour, and I really enjoyed them for my breakfast alongside some more raspberries, strawberries and a bit of choc shot drizzled on top!
Breakfast eggy crumpets
This recipe is from Jamie Oliver's 'Jamie at Home' book (available here on Amazon) - since we first had this it has been a real favourite for my husband and I- it's super easy to do but qualifies as a 'special' breakfast in our house! You might feel a bit doubtful about the addition of the chilli, but please try it (if you generally like chilli) it works SO well with the rest of the ingredients. We always have ours with brown sauce although Jamie says you can also use maple syrup.
