Wild garlic and pumpkin seed pesto

Ever since I moved back to Devon I have made an annual event of going up to the woods near where my parents live and picking some wild garlic to make pesto. At this time of year it carpets woodland, and isn't one of those foraged things that is impossible to find! If you haven't picked it before, then make sure you google it to ensure you are definitely picking the right leaves (I have popped some pictures below for reference!) , although it's pretty easy to identify with it's strong ...

Lemon & thyme chicken penne

I sometimes struggle to find a meal that I know the whole family will like- my daughters have complete opposite tastes! This is something I cook if I need both something quick, and something that I know everyone will eat. It is very simple to make, but is really tasty- It certainly feels perfect as a lighter pasta dish now we are having longer, sunny evenings! Thyme is a readily available herb, but also so easy to keep yourself- it's very hardy! I am a terrible gardener, and it ...

Easy chilli garlic meatballs

There's nothing more satisfying than a big plate of meatballs! I've always loved them ever since watching Lady and the Tramp share a romantic plateful. Equally it can be a bit of a faff to make and I'm all for the easy life, so I've come up with this version which is so so quick to prepare, but tastes so good every time! The key to this is that the sauce doesn't involve any chopping or standing over the cooker, it's just blended and then left to simmer. It's also a real lesson in how ...

Spicy turkey meatballs

Meatballs are one of my favourite dishes, and I make loads of different versions! Pre-slimming I used to make a sauce which used cocoa powder and wine and it was a bit of a signature dish, but I have recently gone a bit more back to basics with my meatball sauces, and with this one I definitely think it pays off to keep it simple! It's very garlicky though, so don't have this the night before a date or a job interview! I also use the food processor here as personally I like a lump-free ...

Chicken pizzaiola

If you have followed this blog for a while you may well have picked up on the fact that I love a good pizza sauce! Perhaps it's because it tastes so good without being unhealthy, or it has that echo of eating something really indulgent (a big old pizza) and chases away cravings for junk food. This is the sort of meal that I would always go for if I was at an American-Italian restaurant, it's such a satisfying meal to eat. This is the super-quick version- most of the time I would add in ...

Spicy courgetti bolognese

I quite often end up adding chilli into my spaghetti bolognese to liven it up a bit, and thought I would try one that's meant to be spicy. When it was ready, I decided to try it out with courgetti (spiralized courgette) rather than traditional spaghetti to see if it would work. I find normally if I have bolognese sauce with courgetti I just want pasta too- I think you need a bit of zing with courgetti to really enjoy it! I was sent some of Cirio's range of tomatoes to try out, and for ...

Authentic Italian style spaghetti bolognese

You may be able to tell from the number of bolognese recipes on this blog how much I love it! Often I make a really rich sauce with all sorts of very non-Italian ingredients added! I was sent some premium tinned tomatoes by Cirio, and thought I would try to use these to take my bolognese back to basics and make a really tasty Italian style version.

Creamy mushroom and bacon linguine

This is a very quick and easy meal to make, but it tastes so good! If you need an easy weeknight supper this is perfect- just a few basic ingredients leaves you with an indulgent tasting pasta dish.

Spaghetti puttanesca

Before I tried this meal, I would have said that I didn't like anchovies, olives or capers... this converted me to all of those things! If you think you don't like anchovies I really urge you to give this a go! This version is the super-quick one, so I haven't included olives and capers (if you are following Slimming World you would need to syn the olives). This is the pasta sauce I make when our cupboards are (nearly) bare, and for just such occasions I make sure that I always have ...

Skinny Carbonara (Jamie Oliver)

I recently bought Jamie Oliver's latest recipe book Everyday Super Food (click here), so many of the recipes look brilliant, but this is the first one that I fancied trying- it's pretty far from a traditional carbonara, but it really was delicious, and I definitely recommend trying it!
