Slow-cooker Mexican casserole
As you might know, I love a good 'dump dinner', where you can just throw all of the ingredients into a pot and forget about it (take a look at some of my favourite dump dinners here!)
This is the first time I have tried quinoa in this type of dish and it's ideal- it provides a filling bulk that cooks nicely but doesn't go mushy or squishy, and actually quinoa itself is packed full of protein and high in fibre. If you feel a bit unsure about the quinoa I urge you to try it- it's a common ...
Easy whole Tandoori roast chicken
This is so simple that it barely qualifies as a recipe, but I thought it should be included as it's one of those things that I cook time and time again- in fact it's often my go-to on those 'I have no idea what to cook' days!
Why's it so good? Well, I'm a big fan of cooking whole chickens anyway, because you can get so many meals out of them! I usually start with a roast dinner, strip the remaining meat and use it for sandwiches, risotto, stir fries, and then make a simple chicken ...
Mexican lime & chicken rice
There are so many dishes where a squeeze of lime adds such incredible flavour and lift, and I love that Mexican-style combination of zesty lime, chilli and garlic. I've been wanting to have a go at a Mexican all-in-one style rice dish where lime is one of the predominant flavours, and the great thing about this is that it's packed full of healthy vegetables and is also delicious both hot and cold- so worth making a double batch and saving some for quick and easy lunches.
This dish could ...
Mexican is my go-to cuisine when I'm not sure what to cook as I just love the flavours, and it's a great way to pack in lots of healthy vegetables and beans! I try to always keep a batch of my fajita spice mix in a jam jar on the shelf to speed up the cooking process.
This Mexican lasagne is made up of a fajita style mix- chicken, onions and peppers, layered with thinly sliced butternut squash, filling pinto and black beans, salsa style tomatoes and melted cheese. It's a fantastic ...
Nando’s style peri-peri spice mix
I absolutely love per-peri chicken, and I make up my Nando's style spice mix in batches so that after I've done it once, I have it on the shelf for quick and easy meals in the future. I save empty jam jars and use those to store my spice mixes!
If you are following Slimming World you will find that most of the packet mixes contain unnecessary syns! It is much more cost-effective and a healthier option to make your own.
The recipe in this batch makes enough spice mix to do 4 meals ...

Chicken fajita traybake
Chicken fajitas are a staple in my household- I never get tired of them! It's often a Saturday night dinner for my husband and I, but equally I don't like a meal that involves me standing over a pan on a Saturday night (I'd rather be sitting in front of the fire drinking a glass of wine!). That's why I tried these as a traybake (or sheet pan) style meal- you can prep it all, pop it in the oven and go and sit down while it cooks, what's not to love?!
I actually really love the Old El Paso BBQ ...
Mexican layered chicken bake
Mexican food is a real love of mine, fajitas are often a Saturday night treat for us, but unfortunately wraps generally aren't wholesome or healthy, so I really wanted to come up with an alternative which still seems like as much of a treat. I have made an enchilada bake before which is really delicious, but although it cuts down on the amount of wraps you would normally have, it does still use them. I decided to trial grated sweet potato as one of the layers both to create more ...
This is my version of Nigella's 'brocamole' idea- she in turn credits the idea to Ludo Lefebvre, who did a purely broccoli version with no avocado.
I adore fresh guacamole, and although avocados are very good for you and full of 'healthy' fat, if you are following Slimming World it is very high in syns and for me it's great to be able to enjoy guacamole without eating a ton of syns!
Homemade refried beans (frijoles negros)
I've always been a big fan of refried beans, even when I was a very fussy eater as a child! I love Mexican food, and spent a summer travelling around Mexico 13 years ago. The food was just as good as I had hoped- everywhere are street food stalls selling amazing little soft tacos with different fillings. The restaurants were amazing- if you ordered fajitas often the meat/prawns would be charcoal grilled and it would come out sizzling on a skillet. So so yummy! It was also the first time ...
