Easy mushroom soup
Mushroom soup is a real winner because it's so quick and easy to do, but the flavour of the mushrooms gives it an incredible deep and savoury flavour that isn't usually easy to achieve in such a quick soup.
I've opted for chestnut mushrooms for this as they have a strong flavour that is perfect for soup.
I added a little sage into this, I didn't want it to be an overpowering flavour, just a hint. I love sage as it's so hardy it grows really well out in the garden without any maintenance and ...
Easy whole Tandoori roast chicken
This is so simple that it barely qualifies as a recipe, but I thought it should be included as it's one of those things that I cook time and time again- in fact it's often my go-to on those 'I have no idea what to cook' days!
Why's it so good? Well, I'm a big fan of cooking whole chickens anyway, because you can get so many meals out of them! I usually start with a roast dinner, strip the remaining meat and use it for sandwiches, risotto, stir fries, and then make a simple chicken ...
Welsh Lamb Bombay hotpot
Disclosure: This is a commissioned recipe post for PGI Welsh Lamb
A traditional meal made with lamb is a Lancashire hotpot and I wanted to have a go at mixing this up a bit to produce a hotpot with a lamb curry base- this is a hotpot with a difference!
As it is now peak season for Welsh Lamb, I have created this recipe to showcase this fantastic meat. Peak season lasts from August until November, and I was lucky enough to be invited by PGI Welsh Lamb to join them on a trip ...
Mexican lime & chicken rice
There are so many dishes where a squeeze of lime adds such incredible flavour and lift, and I love that Mexican-style combination of zesty lime, chilli and garlic. I've been wanting to have a go at a Mexican all-in-one style rice dish where lime is one of the predominant flavours, and the great thing about this is that it's packed full of healthy vegetables and is also delicious both hot and cold- so worth making a double batch and saving some for quick and easy lunches.
This dish could ...
Mexican is my go-to cuisine when I'm not sure what to cook as I just love the flavours, and it's a great way to pack in lots of healthy vegetables and beans! I try to always keep a batch of my fajita spice mix in a jam jar on the shelf to speed up the cooking process.
This Mexican lasagne is made up of a fajita style mix- chicken, onions and peppers, layered with thinly sliced butternut squash, filling pinto and black beans, salsa style tomatoes and melted cheese. It's a fantastic ...
Lemony turmeric potato and chicken traybake
Disclosure: This is a commissioned recipe post for Tesco Jersey Royal New Potatoes
You know Spring has well and truly arrived when Tesco Jersey New Potatoes arrive in store (find them here!)- these little beauties are seasonal and only available between April and July. To celebrate their arrival in Tesco stores this year, I have created this delicious recipe- it's super easy to throw together and baked all in one go in a baking tray which makes it completely hassle free! The ...
Nando’s style peri-peri spice mix
I absolutely love per-peri chicken, and I make up my Nando's style spice mix in batches so that after I've done it once, I have it on the shelf for quick and easy meals in the future. I save empty jam jars and use those to store my spice mixes!
If you are following Slimming World you will find that most of the packet mixes contain unnecessary syns! It is much more cost-effective and a healthier option to make your own.
The recipe in this batch makes enough spice mix to do 4 meals ...

Herby pork and bean stew
Some friends hosted us for a gorgeous lunch on New Years' Day, and cooked this absolutely beautiful pork dish. The recipe was an Ottolenghi one from the Guardian (you can find the original here). It's a fantastic recipe, but for me, it's more work than I would do for anything other than a very special occasion, as it involves roasting a whole shoulder of pork before making the casserole.
I decided that I would like to make something similar, but that is much more of an accessible ...
Oven-baked chicken cacciatore
Chicken cacciatore is a delicious Italian dish with a rich, rustic sauce. I oven-baked this, as I love it when chicken thighs are fall apart tender, and the tomato sauce has broken down to be rich and dark.
Not only is this a very tasty dish, it's a great way to pack veg into the sauce. On top of what I have used in this recipe, you could add mushrooms, olives, courgette, carrot.... the rich flavours in the sauce can carry all sorts of veg!
This is certainly family friendly in ...
