BBQ apple pulled pork
I was given a lovely gift last week- a huge bag of windfall apples! My youngest daughter is not a fruit eater, but she loves stewed apple, and the whole family (apart from me!) love spiced apple cake, so we already have lots of uses for them, but I also remembered that last year I had a go at making a bbq pulled pork that incorporated apple into the sauce to make a really delicious pork dish- the girls both loved it, and it was a fantastic dish that provides meals for days afterwards!
Crushed pea, mint, lemon and asparagus salad
This recipe is from the lovely Katie Pix, and put together to go perfectly with the Saucy Fish Company's smoked haddock with vintage cheddar and chive sauce.
It's a perfect summer salad- easily pre-prepared so that you can just whip it out of the fridge whenever you are ready!
Thai carrot and red cabbage salad
We recently had a lovely weekend away where our hosts cooked the most amazing meals- they were catering for 11 adults and 4 children and they went to so much time and effort to feed us all. South-African Bunny Chow
Anyone who is a regular visitor to my Facebook page will know that I am a huge Nando's fan! It's my perfect comfort food, and we'll often have this Homemade Nando's as a weekend treat!

Chinese char siu pork (bbq pork)
I wanted to have a go at making my own char siu pork as I love the look of it! We never get takeaway as there isn't anywhere to get it where I live, but I still love the takaway experience (lots of dishes to help yourself to!) so will often do a Chinese, Indian or Mexican at the weekend. Because there are so many amazing flavours in these cuisines anyway, you really don't need all the fat and oil that you would get in a takeaway dish in order to have something that still tastes amazing.

Cheeky Nando’s style peri-peri chicken

I love a homemade burger and have experimented lots with different recipes even before I was following Slimming world. I think that this recipe is the best healthy one I've done. The oyster sauce keeps it moist while cooking, even with a low fat mince and gives it a nice saltiness.
I served this one with curly fries (made with my new sprializer- Click here- £33.77 on Amazon) and broccoli and runner beans fried with red chilli.
