BBQ apple pulled pork

I was given a lovely gift last week- a huge bag of windfall apples! My youngest daughter is not a fruit eater, but she loves stewed apple, and the whole family (apart from me!) love spiced apple cake, so we already have lots of uses for them, but I also remembered that last year I had a go at making a bbq pulled pork that incorporated apple into the sauce to make a really delicious pork dish- the girls both loved it, and it was a fantastic dish that provides meals for days afterwards! I ...

Crushed pea, mint, lemon and asparagus salad

This recipe is from the lovely Katie Pix, and put together to go perfectly with the Saucy Fish Company's smoked haddock with vintage cheddar and chive sauce. It's a perfect summer salad- easily pre-prepared so that you can just whip it out of the fridge whenever you are ready!

Thai carrot and red cabbage salad

We recently had a lovely weekend away where our hosts cooked the most amazing meals- they were catering for 11 adults and 4 children and they went to so much time and effort to feed us all. All of the food was delicious and I've asked for all the recipes, but one of the absolute stars was a grated vegetable salad which had Thai flavours. It's really something that I would never have thought of doing and it's really inspired me! I don't yet have that specific recipe, but we were heading ...

South-African Bunny Chow

Anyone who is a regular visitor to my Facebook page will know that I am a huge Nando's fan! It's my perfect comfort food, and we'll often have this Homemade Nando's as a weekend treat! When Nando's got in touch with me to ask if I'd like to have a go at making their Bunny Chow, I was excited to try it out (after googling to see what it was!), I've just made a couple of little adjustments to keep it Slimming World friendly. Why Bunny Chow? In exploring its Southern-African ...

Chinese char siu pork (bbq pork)

I wanted to have a go at making my own char siu pork as I love the look of it! We never get takeaway as there isn't anywhere to get it where I live, but I still love the takaway experience (lots of dishes to help yourself to!) so will often do a Chinese, Indian or Mexican at the weekend. Because there are so many amazing flavours in these cuisines anyway, you really don't need all the fat and oil that you would get in a takeaway dish in order to have something that still tastes amazing. ...

Apple BBQ pulled pork

We went to a gorgeous 'apple day' a couple of weeks ago at Parke, a lovely bit of National Trust owned Devon countryside- not only did they have Dartmoor ponies bringing apples down from the orchard to put into the traditional press for apple juice, but the amazing cafe there, Home Farm Cafe, had a very apple themed menu- it was so cosily autumnal! I had a pulled pork roll with apple chutney which was gorgeous, and set me thinking about actually adding some of these autumn apples into the ...

Skinny chicken tikka masala

Chicken tikka masala is one of my all time favourite meals- I know it's not a proper curry, but there's a reason that it's become one of Britain's best loved dishes! One of my healthy eating aims has been to find a way to make a really tasty chicken tikka masala that is also completely guilt-free. I've done this version in the slow-cooker before which I was really pleased with, but I think this one's my best yet! It was suggested to me a while ago on my Facebook page that I try ...

Homemade barbecue sauce

This sauce is a bit of a family tradition for me- my Dad passed down the mantle to me when I was about 14. It's a bit like George's Marvellous Medicine, no 2 batches have ever been the same, and it often depends whats in the cupboard as to what ends up in it! The original always contained a fair amount of red wine and sugar, which I have pulled back on for this version (although I think it still needs some sugar, and for me sweetener won't do although please do substitute if you prefer to ...

Cheeky Nando’s style peri-peri chicken

I was really late on the Nando's bandwagon- I always thought I liked the look of it but never had the chance to go, once I went it was confirmed! I love chilli, I love chicken, I love chargrilled things, I love chips, I love sweetcorn, I love garlic bread- it's like it was made for me! Unfortunately, although it's not as bad as some fast food, it's still full of fat and sugar. Since I have had kids we hardly ever get to eat out anyway, and if we go it's usually using our Tesco Clubcard ...

Perfect burgers

I love a homemade burger and have experimented lots with different recipes even before I was following Slimming world. I think that this recipe is the best healthy one I've done. The oyster sauce keeps it moist while cooking, even with a low fat mince and gives it a nice saltiness. I served this one with curly fries (made with my new sprializer- Click here- £33.77 on Amazon) and broccoli and runner beans fried with red chilli. You can have a 60g wholemeal roll as your Healthy Extra ...
