BEST EVER CRANBERRY SAUCE

One of the things that I love about Christmas is doing some festive cooking! Nothing beats the house being warm, cosy and full of Christmassy fragrances! One of the things that I usually prepare in late November or early December is my homemade cranberry sauce.

At this time of year fresh cranberries are readily available in all of the supermarkets, and are usually really cheap to buy. I have also occasionally bought the ones that are heavily reduced after Christmas and frozen them for the following year!

Although of course you can buy ready made cranberry sauce, the homemade version tastes so much better, and it is super easy to do, it really can’t go wrong! The other thing that I love about doing a homemade cranberry sauce is that you can customise it. I always add some orange zest and juice, as the flavour is gorgeous, but you could always make a mulled version (some star anise, cinnamon, red wine) or even add some chilli in to spice it up!

This homemade cranberry sauce only take 5 minutes to prep and 20 minutes to cook! This also makes a lovely Christmas gift for friends/family/teachers- I save jars throughout the year and use them for this and for my homemade mango chutney, then just buy some pretty lid covers (or use hessian) and tie with ribbon or twine and you have a lovely homemade gift.

With regards to being Slimming World friendly- this is the Christmas version, when I would make it with sugar- so therefore it is not syn free- the sugar also helps to preserve it so that it lasts if you make it in advance.

Ingredients

  • 300 g fresh cranberries
  • zest and juice of 1 orange
  • 100 g brown sugar
  • pinch of salt

Instructions

  • Heat up the orange juice, orange zest and sugar together until simmering, to dissolve the sugar
  • Add in the cranberries, stir well, add in a pinch of salt and cover.
  • Simmer gently for 20 minutes, stirring occasionally
  • Allow to cool slightly, and transfer for a jar. Store in fridge.
