Spring leeks and peas
It's lovely to discover new favourite dishes, and this leek side, which I created as part of my Easter meal, is really easy to do, delicious, and makes a nice addition to any family meal, especially a roast dinner.
The great thing about leeks is that they are grown in the UK, they are cheap to buy and they have loads of flavour!
Scalloped potato gratin with rosemary and garlic
I recently attended a lovely Easter event with Iceland Foods, and was inspired to come home and cook my own Easter Feast! I love potatoes Dauphinoise, but they are usually full of fat, so I wanted to create something that looked as lovely on the table, but that was a healthy alternative with no added fat. Particularly as this was for an Easter Feast I wanted to keep the main as lean as possible to allow for chocolate consumption throughout the rest of the day!

Butternut squash puree with maple and cinnamon
I was inspired to make this puree after attending a lovely Easter event with Iceland where the chef served roast turkey with a butternut squash and cinnamon puree. I thought this was a delicious, and great alternative to serving gravy and I thoroughly enjoyed it!
My version is slightly different, I added in a little maple syrup for sweetness, and a small amount of butter which really gives this such a gorgeous smooth texture, and rich, buttery taste.
