Jambalaya

A friend recently suggested I tried frozen pre-chopped onions, she said it had been a game-changer for her- I had always felt a bit funny about it- maybe thinking it was a bit lazy not to just chop your own onion if you needed it?! But my mind has been completely changed! Why did I not do this sooner? It just makes general meal prep so much quicker, and who isn't pressed for time these days, plus, I actually really flipping hate chopping onions! The other thing that this revelation has done ...

Jerk fish traybake

I'm so keen to get more fish into our diets- it's such a healthy option, and with so many proven health benefits- fish really is a superfood, way more than all of the fads that come and go. Unfortunately I haven't been as super-organised as I planned to in getting to a fishmonger, and therefore our diets definitely don't include the recommended 2 fish-based meals a week. I've found the perfect way to address this, and I can't really believe I didn't clock on sooner! Frozen fish! The ...

Butterbean and za’atar dip

One of my favourite cookbooks of 2016/17 has been Sabrina Ghaynour's Sirocco, I've loved every recipe that I've tried, and this one I have made over and over again- pretty much any time we have had anyone over for dinner/snacks and often as a Saturday night nibble! I made the recipe by the book for my Christmas Persian feast, it uses lots of garlic oil, and is super-tasty. However I wanted to make a healthier version so that I could enjoy it guilt-free, so I've made a few little changes ...

Asparagus and bacon quiche with sweet potato & oat crust

My method of cooking is generally like one long episode of Ready Steady Cook- I tend to shop randomly around special offers, and then every day I make up our meals based on what I have in the cupboards/fridge. Today I had a picnic lunch planned with some friends and the kids- I wanted to make a quiche to bring, but when I checked up on my supplies I realised I only had 1 sweet potato left (this is my usual quiche crust, click here to see), and I had completely run out of cheese, ...

South-African Bunny Chow

Anyone who is a regular visitor to my Facebook page will know that I am a huge Nando's fan! It's my perfect comfort food, and we'll often have this Homemade Nando's as a weekend treat! When Nando's got in touch with me to ask if I'd like to have a go at making their Bunny Chow, I was excited to try it out (after googling to see what it was!), I've just made a couple of little adjustments to keep it Slimming World friendly. Why Bunny Chow? In exploring its Southern-African ...

Samphire Restaurant at the Headland Hotel, Newquay

For me, one of the greatest pleasures in life is discovering new restaurants, and trying dishes that you would never be whipping up for yourself at home- I don't often eat out these days, and so when I do it is an extra special treat. I was thrilled to be invited along to the The Headland Hotel in Newquay, Cornwall recently for an evening with their head chef, Christopher Archambault to try out some of the dishes offered at the 2- Rosette awarded Samphire Restaurant. My first ...

Pomegranate and orange glazed ham

Right on my doorstep is The Old English Pig company- they breed beautiful free-range, traditional Old English pigs, and their sausages are honestly the best I have ever tasted (and they are working on a low fat one!). I've had a lovely piece of gammon from them sitting in my freezer since Christmas, and I really wanted to do it justice by finding an unusual and delicious glaze for it! I think for an effective glaze you need to have a really good amount of sweetness, and so I ...

Mediterranean style lamb kebab

I'm still discovering what my Tefal Actifry can do, I've recently received some recipe challenges from Tefal, and this was my second! My challenge from Tefal was to create a healthy Mediterranean style kebab recipe. I wasn't sure how easy this would be to do in the Actifry, but was so happy with the results! I love any recipe where you can throw in all of the ingredients and then leave it to look after itself, and this was a perfect example of this! https://youtu.be/g-iI3y6Rcjg I ...

Pork satay hot pot

I adore satay sauce, but traditionally I would have used peanut butter and sugar to make a tasty one and unfortunately it's just not a healthy combination! I wanted to make an easy to do, but tasty satay with plenty of sauce and this ticks all of the boxes. It's perfect for all of the family, I leave the chilli out for the kids! I love powdered peanut butter, particularly for cooking with as it’s a low-fat way to get that peanutty taste, and it mixes in so well with sauces and marina...
