Mini chocolate orange Christmas puddings

I've made a very naughty version of these before with my kids involving lots of cornflakes, cocoa and golden syrup-  I wanted to do something similar, but something that wouldn't use up all my syns in one fell swoop if I indulged! Chicken and mushroom pie

I really adore pie, and this version is still a little bit of a treat as I use enough pastry to knock the syns up to 9.5 per portion, however how much pastry you use is completely up to you, and without the pastry just the pie mix itself if only 2.5 syns per portion. I used the Yeo Valley 0% fat creme fraiche which is 0.5 syns per tbsp (6 for the whole pot), but you could also use the Asda Good For You creme fraiche or the Sainsbury's Be Good To Yourself creme fraiche (less than 3% fat) ...

Coffee cup warm jam sponge

I was sent some Jim Jams reduced sugar strawberry jam to try and so had a little experiment with a cake made in a coffee cup! It came out really well, so here it is!  

Bloody Mary Beef

I've been dying to try out this recipe as it looked mouth-wateringly good in the Jamie's Comfort Food book (click here). I've neglected this book since starting Slimming World as a lot of the food in it is pretty decadent, but when I looked again at this recipe I realised that it's actually very Slimming World friendly! I made a couple of small adjustments but it makes a gorgeous, rich meal with very few syns.  

Carrot and orange oat cookies

These were an experiment as I was feeling so bored of all my usual breakfasts and wanted something that tasted like a treat but wasn't full of fat! These tasted lovely fresh out of the oven and I think it's a real bonus that they also contain some lovely speedy carrot! I used date nectar to sweeten them, but you could use a syn free sweetener if you want to make them almost syn free (the baking powder is also synned), or use golden syrup if you don't have date nectar.   ...

Chipotle chicken chilli wedges

I really fancied something that felt like junk food so I made this up, and actually it was really tummy! Chipotle is a lovely smoky chilli flavour and it works so well with the chicken, a bbq style sauce and melted cheese! The good news it is also super easy to make! You can get chipotle chilli powder in some of the large supermarkets (I've seen it in Tesco), or you can buy on Amazon (Click here)  

Firecracker prawn curry

I adapted this recipe for Slimming World from the Phaidon India book which is the bible of curries (See it here). This prawn curry is just delicious- I like them hot (and this one is not for the faint-hearted but it's so satisfying to eat) and just has a perfect balance of flavours. This is perfect served with my spinach and carrot pilau rice - click here

Leon’s (not too) spicy chicken cous cous

This cookbook is one of my all time favourites:    I have got lots of firm favourites from it. I urge you to try this (not too) spicy chicken cous cous, as it is seriously delicious! I have really reduced the amount of oil and butter in this to make it work for Slimming World, but it's still completely yummy!
