Slow-cooker beef brisket with rich onion gravy
I love beef, and particularly when it is slow-cooked- that tender, fall apart texture can't be beaten! Beef brisket is one of the cheaper cuts to buy because it does require a long, slow cook, but you really can't beat it, and it makes a fantastic Sunday roast centrepiece that actually requires very little effort!
I picked up a piece of beef brisket in Tesco's a little while ago as it was on special offer, and I really wanted to try something different to anything I had cooked before ...
3 ingredient slow cooker balsamic chicken
I have to say, if I didn't know what had gone into this I would have thought someone had spent a lot of time and effort on it! It really is the easiest meal to make and tastes really good!
If you are following Slimming World, salsas do vary in syns, on average they are 0.5 syns per tbsp, but some are more so do check.
Bonfire Night stew
You may have seen the very popular slow-cooker campfire stew- this is a similar idea, but I wanted proper homemade baked beans instead of tinned ones for this. It's so quick to make, with minimal work and produces a rich and hearty stew all on it's own in the slow-cooker!
Amazing 5-ingredient slow-cooker salsa chicken
This recipe uses shop bought salsa to make a really delicious slow-cooked shredded chicken and black-bean Mexican style dish. I had little faith that putting 5 ingredients into the slow cooker would make something that I'd want to do again, but thought I'd give it a try and it was worth the experiment. Just stick in the slow-cooker in the morning and come home to a completely yummy dinner! I've based the syn values in this dish on the salsa I used, which was the Dorito's hot salsa- but ...
Slow-cooker bbq beef brisket
This recipe is adapted from a Tom Kerridge recipe for BBQ beef brisket, to make it Slimming World friendly. In Tom Kerridge's version the beef is left overnight in the rub to really let the flavour absorb (you can do this if you have time and remember, but I haven't put it in this recipe as I never remember about it the night before!). I tried this in the slow-cooker as I wanted to be able to go out and leave it, and it turned out beautifully. Please note you will need a ...
Slow-cooked Mexican black bean & shredded salsa chicken
This is a great recipe- it's very quick to throw together in the slow cooker, but the end result is a really delicious Mexican inspired dish which is very versatile- It's lovely just with rice, wrapped in a tortilla, or put into an Old El Paso stand 'n' stuff tortilla, topped with cheese and oven baked!
Slow cooker campfire stew
When you don't have much time on your hands for prep but want to cook something that feels a bit special, this is a great recipe. Using mainly storecupboard staples, the slow cooker gently cooks the ham into fall-apart tenderness, and the paprika turns the beans into smoky, cowboy-worthy yumminess! The other great thing about this is not only is it a great dinner, it's also fab on top of a jacket potato the next day!
If you don't want to use bought baked beans then try my version using ...
