Pip’s favourite spaghetti bolognese recipe
I have posted a lot of bolognese recipes since I started this blog- but I love experimenting to find that magical formula for a really good brew! This is the recipe that I think gives the best all round results every time- it's certainly not a traditional Italian recipe, but I think that the little twists really work to create a rich and tasty bolognese. Crushed carrots with harissa and pistachios

Spicy courgetti bolognese
I quite often end up adding chilli into my spaghetti bolognese to liven it up a bit, and thought I would try one that's meant to be spicy. When it was ready, I decided to try it out with courgetti (spiralized courgette) rather than traditional spaghetti to see if it would work. I find normally if I have bolognese sauce with courgetti I just want pasta too- I think you need a bit of zing with courgetti to really enjoy it!

Sweet potato falafel
I only discovered falafel in my 20's, and was instantly in love. Not only is it super-worthy, being made from chickpeas (full of fibre and protein), they taste so good, and are a fab way of bulking out a salad. For me, as a sworn meat eater, they also provide a viable meat alternative!
I've tried making falafel without using any olive oil before, but it was quite dry and crumbly- adding in the sweet potato gives it a lovely texture and extra moisture without oil.

I'm always experimenting with different pancake recipes as I love them as a breakfast option! These ones use pureed raspberries to flavour them, and are lovely served with honey, golden syrup or choc shot and some fresh berries!
Egg fried rice
This is so simple that it doesn't really justify being a 'recipe', but it's n easy one to get wrong- the first time I tried it I stirred it too soon and the egg basically coated the rice and made it really claggy- not good! So I have typed up the recipe just to give you the quick and simple way of doing it!
Twice cooked crispy ‘seaweed’
I was not sure that this recipe was going to work without lots of oil, but it was a complete winner! I'm not the biggest fan of kale, but it really is perfect for this recipe. I'm not sure I can see many scenarios in which I would enjoy eating a big mouthful of kale, but this is so nice!
You might think the 'twice cooked' thing is a bit strange, but the interval allows the kale to rest and steam off extra moisture so that the 2nd bake gives it a lovely crisp without burning ...
Jerk pork with pineapple
I'm all for a ready-made jerk seasoning, but it's also nice to do it yourself sometimes for that fresher taste- this is a gorgeous tasty jerk pork dish, and it's really complemented by the sweet and juicy pineapple.

I love lasagne. It was the one craving that I had when I was pregnant! My old lasagne would have had a traditional white sauce made from (lots of) butter, flour and milk. Fairly recently my husband and I got stuck in terrible traffic on a long road trip, and had the choice of McDonalds, Harvester or KFC.
