Spinach and carrot pilau rice

A lovely twist on the rice to go with your curry, and with some extra speed foods added! 

This really does make your rice extra special and brings it to life alongside your curry.

Ingredients

  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 large carrot, grated
  • 200g basmati rice
  • 100g baby spinach, chopped
  • 400ml boiling water
  • low calorie cooking spray

Method

  1. Spray a large frying pan with the cooking spray, and fry the cumin seeds for 1 minute
  2. Add the carrot and turmeric and stir fry for another 2 minutes
  3. Add the rice and a pinch of salt and pour in 400ml boiling water
  4. Bring to the boil, reduce the heat, and cook with a lid loosely covering the pan for 5 minutes. Add the spinach, stir, loosely cover again.
  5. Cook for a further 10 minutes until the rice is fluffy and tender

Additional Info

Chopped coriander sprinkled over the top is lovely as a garnish
