Now we have finally moved into summer, it’s such a treat to have ice-cream in the freezer, but as much as I love ice-cream, it’s something that I rarely indulge in while I am trying to be mindful of what I eat, as it’s full of sugar and fat. I haven’t ever had a go at making a healthy alternative, and I love the idea of having a guilt-free ice-cream sitting in my freezer this summer!
I was really curious when ao.com asked me if I’d like to try out their low-calorie strawberry ice-cream recipe- and I couldn’t believe it when I saw the main ingredient- cottage cheese! Generally cottage cheese is not something that I would buy- I’ve never been a fan, but I have discovered that it makes a fabulous ingredient (check out these pancakes using cottage cheese!), and it’s ideal as it’s easy to get hold of fat-free and low-fat versions.
I’m always game for trying something new though, and so I whipped up a batch to give it a go, and to face the ultimate taste-testers- my family!
Strawberries are so perfect for a healthier ice-cream, as as well as being delicious, they are good for you! They also have such a delicious flavour that you don’t need to add lots more ingredients for something really tasty. This is perfect for this time of year as strawberries are in season, so are plentiful, cheap and sweet.
The recipe is very easy and straightforward (you can find it by clicking here), and you don’t need an ice-cream maker to use it, just a hand-blender and a freezer!
If I had blind taste-tested this I would never have guessed that it was made with cottage cheese! It has a lovely consistency (make sure you allow it to defrost for a while so you can scoop it) and a gorgeous, fresh flavour. It reminds me of the soft-scoop strawberry ice-cream I used to get in France as a child- the fresh strawberry flavour it the hero, and it’s a cool, refreshing and entirely guilt-free snack! My cheese-hating 8 year old polished off a bowlful in no time, with no suspicion that it was a healthy version, and even my discerning husband agreed that it was really tasty and refreshing.
