Fluffy American style pancakes

One of my most popular pancake recipes is my Blueberry and cinnamon pancakes, I think because they are really lovely and fluffy, with a gorgeous texture. This is a similar recipe, but using a little vanilla just to make a lovely plain pancake, perfect for any topping that you fancy. I tend to serve them with fat-free yoghurt, strawberries, blueberries and maple syrup. I don't add any sweetness into the actual pancake mix- I tend to use the natural sweetness of the fruit that I add, ...

Healthy chocolate orange energy bombs

My children are the polar opposites when it comes to food. Mimi, who is 8, adores fruit and will eat it like sweets- a big treat for her is to have a fruit salad- the more variety the better. Marls (5) cannot bear fruit, she can't even sit next to someone who is eating an apple or a banana, and if I've cut fruit up for Mimi, she will ask me to wash her hands before I cuddle her! As much as this is frustrating, I can understand it- I felt the same about fruit as a child. With the ...

Slow-cooker chocolate fudge

If you follow my blog then you'll already be aware how much I love my slow-cooker! I use it a lot and always have done. As I look at lots of slow-cooker recipe pages I've often seen this slow-cooker fudge come up, and always thought I would like to have a go at it. The perfect opportunity has come up- Mother's day is on Sunday, and although my Mum isn't a fudge fan, my husband is going to be seeing his Nan, and I wanted to make something special for him to take up to her. The ...

Triple-layer chocolate french toast

French toast makes a fantastic breakfast, as it's as much as a treat as pancakes but it's so quick and easy to make. Last week I had a sudden brainwave after being reminded about the Kingsmill wholemeal crustless toast in Tesco- how about a triple layered French toast, sandwiched together with chocolate spread and peanut butter?! https://www.youtube.com/watch?v=echChF_1kbs So this was the first incarnation of this meal- a layer of bread, a layer of peanut butter, a layer of bread, a ...

Blueberry and cinnamon pancakes

I am often playing around with different 'alternative' pancake recipes, as pancakes are my girls' favourite breakfast. These ones took me 3 versions to get right, but they were absolutely delicious as a finished dish! I chose not to add any sweetness into the actual pancake mix- I love the natural sweetness of blueberries when they are warm and bursting apart, and I like to drizzle maple syrup over the top of these afterwards. If you prefer them sweeter you can always add some stevia ...

Healthy orange and oat cookies

I've just recently discovered Grape Nuts, thanks to Nikki who blogs at Fopperholic, I hoped that they would be a replacement for my favourite Granola, but I am not keen on the taste of them just with yoghurt and fruit, however, they are fantastic baked into goodies! If you aren't sure what they are you can see them here on Amazon (click) but they are available in the cereal aisle of most supermarkets. They provide a lovely crunch to these cookies, and the bonus is that they are ...

Pavlova wreath

This recipe is from the Slimming World Festive Feasts cookbook. I was lucky enough to try it at the Slimming World head office blogger's Christmas lunch (read all about it here) It tastes lovely, looks great on the table and is only 3 syns per serving. The one in the picture was made by the fabulous staff in the Slimming World Head office kitchen, and photographed by me //

Winter raspberry and chocolate log

I was lucky enough to be invited recently to a Christmas lunch at the Slimming World head office(you can read all about it here )- this was one of the pudding choices and it was absolutely lovely! It is only 3 syns per slice so perfect for a guilt-free Christmas treat and it makes a gorgeous centrepiece for a Christmassy table! This is from the Slimming World Festive Feasts Cookbook which is available in Slimming World groups, priced £4.95. Please note the one in the picture was ...

Mini tuna quiches

I can't believe that I have never experimented with filo pastry before! It's so much fun to use, and so easy to use, with the plus-side being that because the sheets are ultra thin it's super low in fat (and syns!). On Slimming World, the average sheet is 3.5 syns, so for something like these mini quiches you can manage a brilliant snack with very few syns. Out of one packet of filo sheets I made a chicken pie (for the kids- but will definitely do a healthy version soon- I use butter to fry ...

Oaty blueberry pancakes with toasted almonds and Manuka honey

I love a treat breakfast, it takes me back to a visit to America with my friend's family when I was 16- every morning her Aunt cooked these amazing treats, waffles, blueberry muffins, pancakes... I still love at the weekend to make a more special breakfast, but I'm also conscious about keeping it healthy. When Rowse honey asked me to create a superfood breakfast containing their Manuka honey, I was well up for the challenge! My biggest discovery in the past year is oats- I can't believe I ...
