Delicious sausage & lentil casserole

I think one of the nicest things about Autumn is getting back into casseroles! I absolutely adore one-pot comfort food, partly because anything that you can cook all in one pot is a total winner in terms of washing up, but partly because of the magic of popping it into the oven or slow-cooker and then having a big reveal hours later where it's transformed into something that fills the house with delicious smells and that you can't wait to eat! Sausages and lentils just go ...

Jambalaya

A friend recently suggested I tried frozen pre-chopped onions, she said it had been a game-changer for her- I had always felt a bit funny about it- maybe thinking it was a bit lazy not to just chop your own onion if you needed it?! But my mind has been completely changed! Why did I not do this sooner? It just makes general meal prep so much quicker, and who isn't pressed for time these days, plus, I actually really flipping hate chopping onions! The other thing that this revelation has done ...

Balsamic sausage and butterbean tray bake

I'm all for a meal that takes 5 minutes to prepare but tastes like more effort has gone into it! Balsamic vinegar on roasted veg is lovely, but throw in some sausages and butterbeans and you have an all-in-one meal that is not only very easy, but also tasty and filling! You can get reduced fat sausages in most of the supermarkets now- I've tried the ones from Tesco, Sainsburys, Co-op, Marks and Spencer and Morrisons and all have been nice! I also really like the Black Farmer sausages- ...

Venison sausage and lentil casserole

I've often made sausage and lentil casseroles over the past few years, and venison sausages are a great choice for anyone looking for a lean option, as they are generally naturally lean, without being labelled as low-fat. I used the Tesco Finest ones in this (1 syn each on Slimming World), but they do vary, I used to do a slow cooker version which included cranberries, but as they aren't readily available at this time of year I tried it without and it was still lovely. If you don't want ...

Sticky honey, soy and mint sausages

This is a very quick way to jazz up your sausages- I tend to buy the Tesco Healthy Living Cumberland sausages which are 1 syn each, but most of the supermarkets do their own version of low fat sausages. My husband introduced me to the concept of sausages and salad many years ago, and it's such a good combination- especially if the sausages have this lovely glaze on them.
