Herby pork and bean stew

Some friends hosted us for a gorgeous lunch on New Years' Day, and cooked this absolutely beautiful pork dish. The recipe was an Ottolenghi one from the Guardian (you can find the original here). It's a fantastic recipe, but for me, it's more work than I would do for anything other than a very special occasion, as it involves roasting a whole shoulder of pork before making the casserole.  I decided that I would like to make something similar, but that is much more of an accessible ...

Slow-cooker Chinese pulled pork

I bought a pork shoulder in Morrisons a couple of weeks ago, intending to make a classic pulled pork recipe- I didn't get around to it, and then a friend threw her husband a 40th birthday party that had an AMAZING hog roast, and then gave me a whole leg that was left over! We were just about to head off on holiday, so I took off the meat and managed to squeeze most of it into my jam-packed freezer (I desperately need a chest freezer- just not sure where to put one!). By that point I had ...

Slow-cooker pork & apple stew

I've been embracing all things frozen over the past 12 months, and I love having frozen products stocked up for easy meals! I have to say I've always hated chopping onions, and I love the pre-chopped onions that you can buy! I made this meal on a day where I was incredibly tight for time, but really wanted to still make a nice wholesome dinner for my family- so I took a risk (for me!) and threw a load of stuff into the slow cooker and hoped for the best! I was really pleased with the ...

BBQ apple pulled pork

I was given a lovely gift last week- a huge bag of windfall apples! My youngest daughter is not a fruit eater, but she loves stewed apple, and the whole family (apart from me!) love spiced apple cake, so we already have lots of uses for them, but I also remembered that last year I had a go at making a bbq pulled pork that incorporated apple into the sauce to make a really delicious pork dish- the girls both loved it, and it was a fantastic dish that provides meals for days afterwards! I ...

Pork satay hot pot

I adore satay sauce, but traditionally I would have used peanut butter and sugar to make a tasty one and unfortunately it's just not a healthy combination! I wanted to make an easy to do, but tasty satay with plenty of sauce and this ticks all of the boxes. It's perfect for all of the family, I leave the chilli out for the kids! I love powdered peanut butter, particularly for cooking with as it’s a low-fat way to get that peanutty taste, and it mixes in so well with sauces and marina...

Chinese char siu pork (bbq pork)

I wanted to have a go at making my own char siu pork as I love the look of it! We never get takeaway as there isn't anywhere to get it where I live, but I still love the takaway experience (lots of dishes to help yourself to!) so will often do a Chinese, Indian or Mexican at the weekend. Because there are so many amazing flavours in these cuisines anyway, you really don't need all the fat and oil that you would get in a takeaway dish in order to have something that still tastes amazing. ...

Apple BBQ pulled pork

We went to a gorgeous 'apple day' a couple of weeks ago at Parke, a lovely bit of National Trust owned Devon countryside- not only did they have Dartmoor ponies bringing apples down from the orchard to put into the traditional press for apple juice, but the amazing cafe there, Home Farm Cafe, had a very apple themed menu- it was so cosily autumnal! I had a pulled pork roll with apple chutney which was gorgeous, and set me thinking about actually adding some of these autumn apples into the ...

Balsamic sausage and butterbean tray bake

I'm all for a meal that takes 5 minutes to prepare but tastes like more effort has gone into it! Balsamic vinegar on roasted veg is lovely, but throw in some sausages and butterbeans and you have an all-in-one meal that is not only very easy, but also tasty and filling! You can get reduced fat sausages in most of the supermarkets now- I've tried the ones from Tesco, Sainsburys, Co-op, Marks and Spencer and Morrisons and all have been nice! I also really like the Black Farmer sausages- ...

Authentic Italian style spaghetti bolognese

You may be able to tell from the number of bolognese recipes on this blog how much I love it! Often I make a really rich sauce with all sorts of very non-Italian ingredients added! I was sent some premium tinned tomatoes by Cirio, and thought I would try to use these to take my bolognese back to basics and make a really tasty Italian style version.

Slow cooker peanut satay pork

I've always adored peanut satay, unfortunately a really indulgent peanut sauce wouldn't be the best thing for weight-loss, so I have come up with this alternative which still tastes really good, but doesn't have the guilt-factor! I have used PB2 powdered peanut butter (you can buy it here on Amazon) in this, as it's a lower fat alternative to peanut butter, and actually it blends really nicely into this sauce, but you can use regular peanut butter, it will just be a bit higher in syns if ...
