Butterbean and za’atar dip

One of my favourite cookbooks of 2016/17 has been Sabrina Ghaynour's Sirocco, I've loved every recipe that I've tried, and this one I have made over and over again- pretty much any time we have had anyone over for dinner/snacks and often as a Saturday night nibble! I made the recipe by the book for my Christmas Persian feast, it uses lots of garlic oil, and is super-tasty. However I wanted to make a healthier version so that I could enjoy it guilt-free, so I've made a few little changes ...

Hummus

The UK hummus shortage prompted me to get this recipe up on the website! It's one of those things that is so super-easy to make, and tastes so good freshly made that I think it's such a shame to buy the plastic pots of it in the supermarket! Most hummus recipes use a fair old bit of olive oil, which is delicious, but not great if you are trying to slim down. I use fat-free yoghurt instead of oil to give it a smooth and 'dippy' consistency, and personally I think it's just as ...

Za’atar spice mix

However, I have found it pretty expensive to by compared to other spice mixes, and so far I have only seen it in Sainsburys and Waitrose so it's not super-easy to get your hands on. That is why I had a ...

Persian cranberry rice pilaf

We had this gorgeous rice as a side dish to our alternative Christmas feast Friendsmas- read all about it here! I have always been hopeless at cooking rice for big groups of people- it nearly always gets all glutinous and stuck together! This is rinsed through very thoroughly and also soaked, and it was perfect! The cranberries were a little nod to Christmas and worked really well in this rice and alongside the other dishes Pulled Persian chicken  and Crushed carrots with harissa and ...

Pulled Persian chicken

This year I cooked an alternative Christmas dinner for a group of friends, a Persian feast (you can read all about my Friendsmas by clicking here, as well as seeing the full menu)! It was inspired by a Persian Street Food stall that I visited at a Food Festival earlier this year. I knew that I wanted to cook some kind of shredded chicken dish, with lots of rich flavours, but I couldn't find a recipe anywhere that seemed to be the sort of thing that I was looking for, so I bit the bullet ...
