Spanish tortilla

Simple, filling and delicious, perfect for picnics, summery lunches and lunchboxes! I've been really struggling with lunches recently, I haven't really been planning and therefore end up at lunchtime just making a sandwich because I don't have time for anything else. This week I re-joined my old Slimming World group- with my husband's working patterns being so irregular I had really struggled to stick to my old Monday night group and had just stopped going, but I know myself, and without ...

Caramelised onion hummus

I'm making up for lost time with hummus, I had never even tried it until about 4 years ago- it just looked like something I wouldn't like! I sampled some out of politeness at a friend's house a few years ago, and realised what I had been missing! I have since discovered how easy it is to make, and not only that, but how easy it is to make a healthy version that still tastes amazing! I've never been a fan of carrot sticks, but add hummus, and they are a treat! Some of my favourites so far ...

Tex-Mex quiche

Easy to make and full of flavour, this Tex-Mex quiche is a lunchtime winner!   I was talking to my lovely friend Katrin (who blogs over Sugar Free Londoner) the other day about pastry alternatives, and realised that it was ages since I had made my favourite pastry-alternative quiche, using a sweet potato crust. I used to always have one of these in the fridge and I find it so handy for snacks and easy lunches. I do go through phases with my favourite food where I make them all the ...

Vegan sweet potato hummus

A couple of months ago I had an amazing weekend away in the Cotswolds with a big group of girls (and inspirational slimmers) that I met through Slimming World- we all met for the first time in 2016 at a bloggers' lunch organised by Slimming World head office, and since become fast friends. I wasn't able to make it to the last meet up, but this time we stayed in an absolutely gorgeous house (Alcester Farmhouse) booked through Kate & Toms, an absolutely brilliant company who have the ...

Butterbean and za’atar dip

One of my favourite cookbooks of 2016/17 has been Sabrina Ghaynour's Sirocco, I've loved every recipe that I've tried, and this one I have made over and over again- pretty much any time we have had anyone over for dinner/snacks and often as a Saturday night nibble! I made the recipe by the book for my Christmas Persian feast, it uses lots of garlic oil, and is super-tasty. However I wanted to make a healthier version so that I could enjoy it guilt-free, so I've made a few little changes ...

Pomegranate and orange glazed ham

Right on my doorstep is The Old English Pig company- they breed beautiful free-range, traditional Old English pigs, and their sausages are honestly the best I have ever tasted (and they are working on a low fat one!). I've had a lovely piece of gammon from them sitting in my freezer since Christmas, and I really wanted to do it justice by finding an unusual and delicious glaze for it! I think for an effective glaze you need to have a really good amount of sweetness, and so I ...

Hummus

The UK hummus shortage prompted me to get this recipe up on the website! It's one of those things that is so super-easy to make, and tastes so good freshly made that I think it's such a shame to buy the plastic pots of it in the supermarket! Most hummus recipes use a fair old bit of olive oil, which is delicious, but not great if you are trying to slim down. I use fat-free yoghurt instead of oil to give it a smooth and 'dippy' consistency, and personally I think it's just as ...

Chicken satay strips

Chicken satay is one of my all-time favourite foods! I wanted to create something that was both a healthy option for a picnic, and also a treat! I'm a big fan of powdered peanut butter, particularly for cooking with as it's a low-fat great way to get that peanutty taste, and it mixes in so well with sauces and marinades. There are a lot more options on the market now since I first started buying this- the first one I bought was PPB which I think cost about £9 from the health food shop- ...

Pulled Persian chicken

This year I cooked an alternative Christmas dinner for a group of friends, a Persian feast (you can read all about my Friendsmas by clicking here, as well as seeing the full menu)! It was inspired by a Persian Street Food stall that I visited at a Food Festival earlier this year. I knew that I wanted to cook some kind of shredded chicken dish, with lots of rich flavours, but I couldn't find a recipe anywhere that seemed to be the sort of thing that I was looking for, so I bit the bullet ...

Bacon and mushroom quiche with sweet potato crust

A sweet potato crust is my favourite way to do quiche at the moment- it's so easy (way easier than making pastry and more healthy!) and it really adds both filling power and flavour to your quiche. When I made this one, I was actually planning to do a chilli courgette quiche, but it turned out I had run out of courgettes, so I just used what I had in the fridge which was mushrooms and bacon! To make the crust I just thinly slice sweet potato with a  sharp knife and layer into a ...
