Mexican lime & chicken rice
There are so many dishes where a squeeze of lime adds such incredible flavour and lift, and I love that Mexican-style combination of zesty lime, chilli and garlic. I've been wanting to have a go at a Mexican all-in-one style rice dish where lime is one of the predominant flavours, and the great thing about this is that it's packed full of healthy vegetables and is also delicious both hot and cold- so worth making a double batch and saving some for quick and easy lunches.

Mexican is my go-to cuisine when I'm not sure what to cook as I just love the flavours, and it's a great way to pack in lots of healthy vegetables and beans! I try to always keep a batch of my fajita spice mix in a jam jar on the shelf to speed up the cooking process.

I absolutely love per-peri chicken, and I make up my Nando's style spice mix in batches so that after I've done it once, I have it on the shelf for quick and easy meals in the future. I save empty jam jars and use those to store my spice mixes!

Chicken fajita traybake
Chicken fajitas are a staple in my household- I never get tired of them! It's often a Saturday night dinner for my husband and I, but equally I don't like a meal that involves me standing over a pan on a Saturday night (I'd rather be sitting in front of the fire drinking a glass of wine!). That's why I tried these as a traybake (or sheet pan) style meal- you can prep it all, pop it in the oven and go and sit down while it cooks, what's not to love?!

This is my version of Nigella's 'brocamole' idea- she in turn credits the idea to Ludo Lefebvre, who did a purely broccoli version with no avocado.
I adore fresh guacamole, and although avocados are very good for you and full of 'healthy' fat, if you are following Slimming World it is very high in syns and for me it's great to be able to enjoy guacamole without eating a ton of syns!
Homemade refried beans (frijoles negros)
I've always been a big fan of refried beans, even when I was a very fussy eater as a child! I love Mexican food, and spent a summer travelling around Mexico 13 years ago. The food was just as good as I had hoped- everywhere are street food stalls selling amazing little soft tacos with different fillings. This was my solution for not eating loads of wraps when I have fajitas or enchiladas! it's layered up like a lasagne, using loads of yummy Mexican layers! In this one I used my homemade refried beans (recipe here) and salsa (recipe here), but you can use the Old El Paso refried beans, and jarred salsa to make it a less labour intensive dish if you want! I just happened to already have leftovers of the beans and salsa from other meals!

I'm all for a jar of salsa and that's usually what I will use if I'm having Mexican, but it's so easy to do and I really fancied having a go in the slow cooker- this also means no need for the unnecessary amount of oil, salt and sugar that you might get in a shop-bought one. If you follow this blog you will know how much I love my slow-cooker- I think it's just being able to throw everything in and leave it- pretty lazy cooking for amazing results!
