Chicken fajita traybake
Chicken fajitas are a staple in my household- I never get tired of them! It's often a Saturday night dinner for my husband and I, but equally I don't like a meal that involves me standing over a pan on a Saturday night (I'd rather be sitting in front of the fire drinking a glass of wine!). That's why I tried these as a traybake (or sheet pan) style meal- you can prep it all, pop it in the oven and go and sit down while it cooks, what's not to love?!

Slow-cooker honey garlic chicken
It just takes 5 minutes to put together the sauce for this easy and delicious honey garlic chicken, a simple combination of ingredients, slow-cooked with chicken breasts which are shredded into sauce at the end of cooking. Perfect served with egg-fried rice, stir-fried vegetables and smothered in spicy sriracha.

The best healthy baked onion bhajis
I've been wanting to make a nice baked version of an onion bhaji for a long time- I've never made any type of onion bhaji before, so this recipe was completely made up. I didn't want to use chickpea flour (to keep them Slimming World friendly), and I also wanted to bake them rather than fry them.
I made a batter using sweet potato, egg and spices, and hoped for the best! I was really happy with the result, they came out of the oven crispy, and genuinely delicious!

Soy, orange & ginger chicken and squash traybake
I love a dish that you can cook all in one, and I really fancied finding a new way to use butternut squash- entering into Autumn there are lots of lovely squash and pumpkins around, and i had an inkling that soy sauce would go really well with baked squash, giving it a bit of caramelisation. I mixed in some orange and zest to help it along with some sticky, sweet flavour, and then some ginger and garlic to finish it off.

Jerk fish traybake
I'm so keen to get more fish into our diets- it's such a healthy option, and with so many proven health benefits- fish really is a superfood, way more than all of the fads that come and go. Unfortunately I haven't been as super-organised as I planned to in getting to a fishmonger, and therefore our diets definitely don't include the recommended 2 fish-based meals a week. I've found the perfect way to address this, and I can't really believe I didn't clock on sooner! Frozen fish!
