Slow-cooker honey garlic chicken
It just takes 5 minutes to put together the sauce for this easy and delicious honey garlic chicken, a simple combination of ingredients, slow-cooked with chicken breasts which are shredded into sauce at the end of cooking. Perfect served with egg-fried rice, stir-fried vegetables and smothered in spicy sriracha.
Healthy Beef Madras
I was always a fussy eater as a kid- I wouldn't touch any fruit and would only tolerate certain vegetables. when I was about 12, my Mum made a discovery, which was that I would eat pretty much any vegetables if they were in curry! Although adulthood (and travelling the world) made me much less fussy, and I love a lot of the foods I wouldn't eat as a child, I still love a good curry!
One of my dreams is to go to India for a cookery course and culinary tour. I've never been to India, but ...
The best healthy baked onion bhajis
I've been wanting to make a nice baked version of an onion bhaji for a long time- I've never made any type of onion bhaji before, so this recipe was completely made up. I didn't want to use chickpea flour (to keep them Slimming World friendly), and I also wanted to bake them rather than fry them.
I made a batter using sweet potato, egg and spices, and hoped for the best! I was really happy with the result, they came out of the oven crispy, and genuinely delicious!
Try these served ...
5-minute Singapore Noodles
As much as I love to cook from scratch, I'm all for a short-cut every now again, but unfortunately I struggle to find convenience food that is up to scratch for me. Generally I'd rather not have anything than a lot of the convenience food that is around! It's been years and years since I've tried a noodle-in-a-pot type snack- the only time I have ever really done it is when I spent a long, wet, cold British summer working in an ice-cream van on Dartmoor where lunch options were ...
Chinese Tenderstem broccoli and beef stir-fry
I’ve had a revelation in my kitchen in the past year- frozen ingredients! I’ve only ever really used my freezer to store leftovers and emergency fish-fingers, but I’ve started to see the power of using my freezer to store my everyday ingredients. Not only is it so convenient for me as, aside from being a very disorganised shopper, I don’t live somewhere where I can just ‘pop’ to a shop; but there has also been a lot of publicity recently about how frozen ingredients are ...
Thai style chicken satay fried rice
Recently I took part in the Tefal Slimmer's Secret Supercook challenge- I was asked to create a healthy and delicious dish using the Tefal Actifry, and this is what I came up with!
I adore satay, and I really liked the idea of a healthy satay dish that you could eat on a day-to-day basis. I also love any dish where all the elements are combined so you don't need to cook lots of sides- the Tefal Actifry is perfect for fried rice dishes as it constantly ...
Soy, orange & ginger chicken and squash traybake
I love a dish that you can cook all in one, and I really fancied finding a new way to use butternut squash- entering into Autumn there are lots of lovely squash and pumpkins around, and i had an inkling that soy sauce would go really well with baked squash, giving it a bit of caramelisation. I mixed in some orange and zest to help it along with some sticky, sweet flavour, and then some ginger and garlic to finish it off.
This all baked together beautifully with the chicken, ...
Jerk fish traybake
I'm so keen to get more fish into our diets- it's such a healthy option, and with so many proven health benefits- fish really is a superfood, way more than all of the fads that come and go. Unfortunately I haven't been as super-organised as I planned to in getting to a fishmonger, and therefore our diets definitely don't include the recommended 2 fish-based meals a week. I've found the perfect way to address this, and I can't really believe I didn't clock on sooner! Frozen fish!
South-African Bunny Chow
Anyone who is a regular visitor to my Facebook page will know that I am a huge Nando's fan! It's my perfect comfort food, and we'll often have this Homemade Nando's as a weekend treat!
When Nando's got in touch with me to ask if I'd like to have a go at making their Bunny Chow, I was excited to try it out (after googling to see what it was!), I've just made a couple of little adjustments to keep it Slimming World friendly.
Why Bunny Chow? In exploring its Southern-African ...
Pomegranate and orange glazed ham
Right on my doorstep is The Old English Pig company- they breed beautiful free-range, traditional Old English pigs, and their sausages are honestly the best I have ever tasted (and they are working on a low fat one!). I've had a lovely piece of gammon from them sitting in my freezer since Christmas, and I really wanted to do it justice by finding an unusual and delicious glaze for it!
I think for an effective glaze you need to have a really good amount of sweetness, and so I ...
