This makes such a delicious and filling breakfast- and it's good enough to feel like a weekend treat! If you are short on time in the morning it is fine to pre-cook and re-heat in the microwace. I just love the crunchiness of the almonds on top of these. I don't add any sweetness into the mix- I like to serve them with raspberries, fat-free yoghurt and some maple syrup, but if you prefer it to taste sweeter you could add some sweetener or fruit syrup/maple syrup into the mix.

Hash brown crust quiche lorraine
With summer finally here, quiche is such a great lunch option as it's so easy to grab and go- we are likely to have a lot of trips to the beach and if I have a quiche ready in the fridge to take I am much less likely to be tempted by pasties! I've been meaning to try out a hash brown crust on a quiche for ages- I have made lots with a sweet potato crust like this tuna and courgette one and this mushroom and spinach one but it's nice to have a change and this was really tasty.
Blueberry baked oats with almonds, cinnamon and maple syrup
This is my favourite breakfast, these are so tasty and so filling! If I've made the time to make these in the morning I find I don't even think about snacking before lunch. These are lovely on their own, but I usually serve them with fat-free natural yoghurt and frozen raspberries. You can prepare the night before by putting the dry and wet ingredients into separate bowls so that all you have to do in the morning is combine and bake!
Blueberry and lemon sauce
I made my 'Healthy delicious pancakes' this morning, and really wanted a tasty topping for them that didn't undo all the good work! This blueberry lemon sauce was really delicous- worked perfectly with the pancakes but still felt like a healthy option.
If you are following Slimming World you do need to syn cooked/pureed fruit, but it really isn't much and definitely worth the syns!
Healthy delicious pancakes
I was a little cynical about the use of cottage cheese in a pancake- I wouldn't normally touch cottage cheese with a bargepole! But these pancakes really do taste good, and are full of goodness! This is a great way to make healthy pancakes without using flour, the oats work perfectly.
Try these served with my homemade lemon and blueberry sauce, or simply fresh berries and maple syrup!
