Apple pie porridge with maple syrup
Porridge really comes into its own in Autumn, it's warming, filling, cheap and doesn't have to be boring!
I created this recipe when I was working with a maple syrup brand, and it's become a real favourite- it's a great way to sneak a little bit of fruit into the kids breakfast, the flavours are great for children and adults alike, and it's also a great breakfast to make for house-guests that isn't too labour intensive but looks and tastes delicious!
I have specified jumbo porridge oats ...
Healthy sugar-free homemade berry granola
About a year ago, I started experimenting with homemade granola- I couldn't find anything in the shops that was healthy enough- it's amazing how much sugar most granolas contain. I also wanted to create a granola that could be used as my Healthy Extra B for Slimming World. I discovered a brilliant way of creating a lovely, crunchy granola that had no need for sugars and syrups- by whipping up egg whites, and using them to bind your granola ingredients together, once baked you have a ...
Berry baked oats with toasted almonds
This makes such a delicious and filling breakfast- and it's good enough to feel like a weekend treat! If you are short on time in the morning it is fine to pre-cook and re-heat in the microwave, or you can have the dry ingredients pre-mixed, and the wet ingredients pre-mixed ready to just combine quickly in the morning. I just love the crunchiness of the almonds on top of these. I don't add any sweetness into the mix- I like to serve them with raspberries, fat-free yoghurt and some maple ...
Fluffy American style pancakes
One of my most popular pancake recipes is my Blueberry and cinnamon pancakes, I think because they are really lovely and fluffy, with a gorgeous texture. This is a similar recipe, but using a little vanilla just to make a lovely plain pancake, perfect for any topping that you fancy. I tend to serve them with fat-free yoghurt, strawberries, blueberries and maple syrup.
I don't add any sweetness into the actual pancake mix- I tend to use the natural sweetness of the fruit that I add, ...
Passion fruit & mango overnight oats
Every time I remember to make overnight oats I mean to do it more often, as they are so delicious! It's one of those things that's more than a sum of its parts.
I'm really fussy about food consistency and always have been- I hate squishy and sloppy things where you don't know whether to chew or swallow! When I first tried overnight oats I was expecting them to be way too squishy for my taste- but they aren't, in fact they have a very satisfying consistency- it's almost like a pudding.
Quiche lorraine with a hash brown crust
Make a quiche using a hash brown crust for a tasty & healthy alternative
Quiche makes a fantastic easy lunch or dinner option of you are looking for healthy meals that you can pre-prepare.
One of the fantastic things about quiche is that it’s a fabulous way to use up leftovers- most veg/cheeses will go and you can come up with some great concoctions!
I adore pastry but I save it for special treats only, and I find that using a potato or sweet potato crust is a great way to ...
Triple-layer chocolate french toast
French toast makes a fantastic breakfast, as it's as much as a treat as pancakes but it's so quick and easy to make. Last week I had a sudden brainwave after being reminded about the Kingsmill wholemeal crustless toast in Tesco- how about a triple layered French toast, sandwiched together with chocolate spread and peanut butter?!
So this was the first incarnation of this meal- a layer of bread, a layer of peanut butter, a layer of bread, a ...
Blueberry vanilla & almond baked oats
This makes such a delicious and filling breakfast- and it's good enough to feel like a weekend treat! If you are short on time in the morning it is fine to pre-cook and re-heat in the microwave. I just love the crunchiness of the almonds on top of these. I don't add any sweetness into the mix- I like to serve them with raspberries, fat-free yoghurt and some maple syrup, but if you prefer it to taste sweeter you could add some sweetener or fruit syrup/maple syrup into the mix.

Blueberry and cinnamon pancakes
I am often playing around with different 'alternative' pancake recipes, as pancakes are my girls' favourite breakfast. These ones took me 3 versions to get right, but they were absolutely delicious as a finished dish!
I chose not to add any sweetness into the actual pancake mix- I love the natural sweetness of blueberries when they are warm and bursting apart, and I like to drizzle maple syrup over the top of these afterwards. If you prefer them sweeter you can always add some stevia ...
