I've seen lot of variations of 'big mac in a bowl' on Slimming World forums and wanted to create something similar- a tasty way to have a burger without the bun. I made these burgers mini just because they look prettier, but overall this was a really tasty and satisfying meal.

Perfect burgers

I love a homemade burger and have experimented lots with different recipes even before I was following Slimming world. I think that this recipe is the best healthy one I've done. The oyster sauce keeps it moist while cooking, even with a low fat mince and gives it a nice saltiness. Hot ‘n’ smoky chilli con carne

Chilli con carne has always been one of my favourite weekend dinners- we have it with homemade guacamole (which tastes SO much better than shop bought), rice, an handful of tortilla chips and cheese melted over the top. Just love it!  

Italian style mozzarella stuffed beefburgers

I'm usually a bit boring (lazy) when it comes to making burgers, and I just shape mince into a burger shape and fry it. I wanted to have a go at making something a little bit more tasty, and I can never resist a melting middle in anything! Please note that the portion of mozzarella in the middle of each burger is half of your HEA allowance for the day.  

Cottage pie

This is such a simple recipe but always really hits the spot! I've squeezed in a few extra veggies into the mince, although I've always done this to get the children eating more than they think they are! Traditionally I would have always used butter in the potato topping, but I've substituted this for light cream cheese to save on calories!  

Tasty spaghetti bolognese

Spaghetti bolognese has always been one of my all-time favourites, and is a fab meal to sneak in a load of veg without really knowing about it when you eat it! For this one I add grated sweet potato and carrot to give it that extra sweetness which makes it popular with the kids as well as me!
