This was my solution for not eating loads of wraps when I have fajitas or enchiladas! it's layered up like a lasagne, using loads of yummy Mexican layers! I'm all for a jar of salsa and that's usually what I will use if I'm having Mexican, but it's so easy to do and I really fancied having a go in the slow cooker- this also means no need for the unnecessary amount of oil, salt and sugar that you might get in a shop-bought one. I'm just back from a week away in Italy and I have overdosed on pasta and pizza for the moment, I came back really fancying a curry, and as I haven't had the chance to get to the shops yet it had to be made from the things in my cupboards.
